marshmallows trump one of those days

There are a lot of reasons I could give for that, but instead let’s talk about marshmallows. Not the white little pucks you take on camping trips for s’mores — the kind you whip up in your friend’s kitchen using all sorts of funky flavor combinations. Did you even know you can do that? I didn’t have a lot of faith in the experiment until we had the first ones melting on our tongues.
Oh my goodness.
So seriously, go do this. As long as you have a candy thermometer I don’t know that you can screw it up. Start with this recipe, make a big batch then divide it into however many flavors you want and add a bit of your flavor (I’d err on the side of strong rather than too subtle) and mix before you let it set up.
We made balsamic vinegar & pink peppercorn, orange moscato, mango & star anise and a Mexican chocolate with chiles & spices.
